Recipes










PINEAPPLE VEGETABLE FRIED RICE

4 Cloves Garlic
8 Green Chilies
Cashews
Green Onions
Carrots…simmer 3 mins
Peas
1 can Baby Corn
Green Pepper
Pineapple ¾ can
4 Cup Brown Rice….You will want 2 Cup
Cilantro

Fry in Olive Oil
Salt Pepper to taste
Soy Sauce 2 tsp. in dish while cooking
Balsalmic Vinegar…put in at the end











ORANGE BREAD

2 Tbs. Poppy Seed
1tsp. Vanilla
1 Cup Sugar
2 Cups Flour
1/2 tsp. baking powder
3/4 Cup Orange Juice...maybe a dash more

Add all Dry Ingredients
Mix well, then add juice

Bake @ 325 for 45-50 mins.












BROCOLLI & CHICKEN EGG MUFFINS



Ingredients:

2 or 3 Chicken Breast Shredded or Diced (meat of your preference, I chose chicken)
1 cup broccoli florets
8 large eggs
1/4 cup milk (or half and half depending on how you're feeling that day)
1/2 tbsp vegetable oil
1/2 tsp baking powder
salt & pepper to taste
Freshly grated Parmesan Cheese as needed


Directions


1. Preheat oven to 375 F.

2. In a large saute pan, over medium high heat, melt 2 tsp. of butter or olive oil, brown chicken for about 5 to 8 minutes, or until the chicken is no longer pink. Remove from heat and stir in broccoli.

3. Whisk together eggs, milk, oil and baking powder. Season with salt and pepper.

4. Lightly spray a 12-cupcake pan with oil.Spoon out the chicken and broccoli mixture evenly into each cupcake.

5. Ladle the egg mixture over chicken and broccoli.

6. Sprinkle with Parmesan cheese.

7. Bake for 15-20 minutes.






Oatmeal Chocolate Bars

Mix together and set aside:
1 c. soft butter
2 c. brown sugar
2 eggs
2 tsp. vanilla
2 1/2 c. flour
1 tsp. soda
1 c. oatmeal
1 tsp. salt

Press 3/4 of the oatmeal mixture  into an ungreased 9x13 baking pan.  Set aside.

 Melt together:

1 (12 oz.) pkg. chocolate chips (milk or semi-sweet)
2 Tbls. butter
1 can sweetened condensed milk
1 tsp. vanilla
(I usually just heat up the sweetened condensed milk and add the chocolate chips, then mix until just some of the chips are melted - I like a few chunks of chocolate!)

Spread this mixture over the oatmeal mixture in the pan.  Sprinkle rest of oatmeal mixture over the top.  Bake at 350 degrees for 25-30 minutes or until the top is set.

These cookies freeze well - I just let them cool, then layer between wax paper in a sealed container - they will freeze for up to two months!
